Cookies and Cream Chocolate Pudding

Its all started in Parsley, a bakery shop in Jogja. My little sister was so in love with one of their chocolate pudding. I think it's sort of like black forest pudding. What's unique about it is the texture of the pudding. It's bubbly like a sponge.

So, my little sister requested for me to give a try at making the "knock off" of the pudding she bought at Parsley. So here's my version of it.

Cookies and Cream Chocolate pudding..!!!!

Cookies and Cream Chocolate Pudding
(My Version)

The taste is very in deep of chocolate. I use the legendary OREO for the cookies.

Here's what you need...:)

Ingredients:
3 Eggs (separate the Whites with the Yolks)
120gr White Sugar
900ml Full Cream Milk
1 sachet of Jelly Mix (Agar-Agar)
1tsp Vanilla Extract
1tbs Chocolate Powder (for the light chocolate bottom)
3tbs Chocolate Powder (for the deep chocolate top)

How To Make:
  1. With a high speed mixer, whisk the egg Whites until its risen and foamy. To make sure it's the right consistency, when you flip your bowl, none will fall off. Then leave it aside and put it in a cool place.
  2. In a pan, put the white sugar, egg Yolks, milk, jelly mix, vanilla extract, and the 1tbs of Chocolate powder. Mix well. Heat up in a low heat by continuously stir until it boils.
  3. After it boils, turn of the stove. Separate around 300ml of it to a separate bowl. Add the 3tbs of chocolate powder. Mix well.
  4. Quickly put the dark chocolate mixture on your pudding tray. The layer should be around 0.5cm thick. Leave it to completely dry.
  5. Go back to the light chocolate mixture that is still quite hot in the pan.
  6. Take the "egg white" mixture. Put the hot "light chocolate" mixture in the "egg white" mixture while mixing it with a low speed mixer.
  7. Continue to mix until the mixture is cooled down (luke warm).
  8. Go to your pudding tray that already has your "dark chocolate" mixture in it. Make sure it is already dry.
  9. Put Oreo (or any other cookies you like) on top of it.
  10. Put the "light chocolate" mixture on top of it (dark chocolate mixture + oreo)
  11. Wait until it cools down completely.
  12. Put it in the fridge.


If you want to serve the Pudding, what you do is you flip your pudding tray. By that, you will have the dark chocolate side on the top that makes the pudding looks so elegant. This pudding is better served cold. So make sure you put it in the fridge for a good amount of hours before serving.
